The plant is a perennial vine with dark green leaves and spikes of white flowers that grows to fifteen feet. The fruit is harvested from plants at least three years old. White pepper is produced by removing the dark skin from the mature berries. The berries are first soaked to loosen the skin, then rubbed to remove it and dried in the sun.
