Mustard

Botanical Name

Sinapis alba

Botany

All forms of mustard are annuals and produce small yellow flowers. Yellow (a.k.a. white) mustard is hardy and grows to about 2.5 feet. The pale, sandy-brown or yellow seeds of the "white" form are larger than the black, brown or Oriental seeds. They are much less pungent, but have excellent preservative qualities.
